Today’s recipe is on the topping side of things as we bring you a delicious COCONUT JALAPEÑO DRESSING 😋
Easy to make, quick to prepare, 100% vegan, gluten free and keto friendly 🌱🙌 + will go down a treat over some tacos, fajitas or a really nice salad (which speaking of, can you guess which recipe we’re bringing out next? 👀) – so let’s cut the chit chat and get down to it! We’re already drooling 🤤
For this recipe, you’ll need:
- 1/2 can (200ml) Organic Coconut Cream
- 1 large avocado (pitted and peeled)
- 1 large jalapeño
- 2 tbsp avocado or olive oil
- The juice of 1 lime
- 1 heap tsp garlic powder
- Salt & pepper to taste
Method:
Chop avocado into small chunks and jalapeño finely. Add it to a blender along remaining ingredients. If needed, add a couple tbsp of water for a finer consistency (it should be quite thick, however). Blend and season with salt and pepper to taste. You can also add a little parsley, coriander or any other herbs of choice. Serve and enjoy! You can keep it in the fridge for up to two days.
