Coconut Rainbow Sprinkles

November definitely isn’t the most colourful month. And while waking up to grey skies can cast a bit of a cloud on our days, Harriet (@harrietemily) has the perfect solution. With Christmas coming up, we think that there’s no excuse not to give these a go and make your food that much more magical. So if you’re looking for a way to inject a pop of colour to your cakes, desserts, pastries, or anything that needs a little lift, these natural DIY coconut sprinkles are the way to go!

What you’ll need:
- 200 grams of Desiccated Coconut
- 4 drops of liquid stevia
- Quarter of a teaspoon each of food colourings, as many colours as you like

 

Let’s get started!

1. In a large bowl, combine the stevia and desiccated coconut. When it’s all nicely combined, divide into six separate bowls. Don’t panic if it’s not completely equal, you won’t notice when it’s being sprinkled!

2. Add 1/4 teaspoon food colouring into each bowl and get stirring again until the colour has evenly spread among the coconut. Keep going with each bowl until you’re all done.

3. Pour each bowl back into the large bowl and give it one final mix and voila! Pop them in a jar and you’re all good to go.
