RECIPE
1½ Cups Ground Almonds/Almond Flour
½ Cup of our Coconut Flour
2 Tbsp. Ground Flaxseed
1 Tsp. Baking Powder
1 Cup Almond Milk
1/3 Cup Coconut Honey (if keto, sub for erythritol and add a tbsp of Coconut Oil)
3 Eggs
1 Tsp. Vanilla
Flaked Coconuts and almonds to decorate
½ Cup of our Coconut Flour
2 Tbsp. Ground Flaxseed
1 Tsp. Baking Powder
1 Cup Almond Milk

METHOD
Pre-heat the oven to 170/190 fan degrees Celsius and grease a medium cake tin.
Mix all dry ingredients in a bowl and pop to one side.
In a jug mix all wet ingredients to form a sticky mixture.
Add to the dry ingredients and mix well; it should form a thick batter.
Pour your cake batter into the cake tin and spread out evenly.
Sprinkle with flaked almonds and bake for 30-35 minutes.
Remove from the oven and leave to cool for 30 minutes in the cake tin then remove from the tin and leave to cool completely.
Store in an airtight container for up to 3 days.
