Creamy Cauliflower Mash

The lovely  Maxine   (Gloriously Delicious ) has provided us with a fantastic recipe for creamy cauliflower mash, featuring our coconut milk! With only five clean ingredients, this mouthwatering mash is the perfect side dish to any dinner. Let’s get cooking, shall we?
What you’ll need:
-  1 cauliflower head
-  ¼ cup Coconut Milk
-  1 clove garlic
-  salt and pepper (to taste)
-  ½ teaspoon ground coriander

  

Let’s get started!

1. Start by chopping your cauliflower into chunks, and steam for 6-8 minutes, until soft.
2. Transfer the cauliflower to a food processor along with the garlic, coriander, salt, and pepper, and blend until broken down!
3. Then add your coconut milk, beginning with two tablespoons and adding the rest gradually while the processor blends, until it achieves the desired creamy consistency.
4. Enjoy! And feel free to save some for later – just reheat on your stovetop when you’re ready!
