Blue Christmas Coconut Cocktail

Have you ever sung along to Blue Christmas? Then this cocktail, by Wishes ‘N’ Dishes, is for you! Taking only five minutes to prepare, this cocktail serves four people. To get started, you will need the following ingredients:

❄️ One cup of pineapple juice
❄️
Half a cup of blue curacao or alcohol-free blue curaçao syrup
❄️ Half a cup of vodka

❄️ Half a cup of coconut cream

❄️ Seven cups of ice

❄️ Coconut flakes

To create this cocktail, begin by pouring a little coconut cream into a shallow bowl, and some coconut flakes into a separate shallow bowl. This will help to make your drinks look extra festive as you dip the rim of your glass into the coconut cream before dipping it into the coconut flakes. The snowy appearance is really magical, not to mention delicious!

Once you have done this, you can use a blender to mix your blue curaçao with the pineapple juice, vodka, and more coconut cream.

Don’t forget your ice!

You should blend this on the highest setting to make sure that the ice is crushed into a smooth and almost creamy consistency - good enough to drink! You can then pour the cocktail into your rimmed glasses and serve.

Coquito Coconut Cocktail

This Coquito Coconut Cocktail (created by Mediterranean Latin Love Affair) is fantastic if you have a little time to prepare. It takes ten minutes to whip up, but takes two hours to chill - alternatively, you can keep the cans refrigerated beforehand. So make ahead of time to serve four people. To make this cocktail, you will need:

🎅 400ml unsweetened coconut milk
🎅 One can (397g) condensed milk
🎅
Half a cup of coconut rum

🎅 Half a teaspoon of cinnamon
🎅 Four decorative cinnamon sticks
🎅 Six cloves
🎅
A pinch of nutmeg

To begin, mix up the coconut and condensed milk with the rum, and either stir by hand or blend on a low speed until well combined. Once this is done, you can add your cloves, nutmeg, and cinnamon before refrigerating.

When your festive feast is in full swing, serve the cocktail over ice and add your cinnamon sticks for serious festive flair.

Coconut Mojitos

If you think a mojito is a summer drink, guess again! This speedy cocktail by Diet Hood is a coconut-infused take on the classic beverage, and takes only five minutes to make.

The recipe makes one cocktail, so you can create a special drink just for you. To make your mojito, grab:

⛄️ Eight fresh mint leaves

⛄️ Half a lime sliced into three wedges
⛄️ One tablespoon of superfine sugar
⛄️ Two ounces of rum (Bacardi Silver Rum or Malibu Rum are good choices)
⛄️ Two tablespoons of coconut cream, shaken well and stirred
⛄️ Sparkling water or lemonade

⛄️ One tablespoon of pomegranate seeds (optional garnish)
⛄️ More mint leaves (optional garnish)

Get going with this cocktail by using a muddler to combine the mint leaves, lime wedges and sugar.

Don’t have a muddler to hand? Grab a wooden spoon and get to work!

Keep muddling until the lime juices have been released, and then stir in the rum and cream of coconut. You can then add ice to your shaker and shake to combine and chill.

Strain the mixture into your glass for a perfect cocktail, topping it off with sparkling water or lemonade. Add more ice and your optional garnishes.

Don’t be surprised if you end up making this creative cocktail for your whole party!
