Hi I’m Rachel! I’m a plant-based raw foodie, avid walker and keen mountain biker, who loves traveling, and developing overly indulgent raw desserts to entice even the most sceptical people, as I believe eating a raw food diet is the best way to nourish both your body and soul.

 

 

Q&A with Coconut Merchant

 

Q. What do you like to do in your spare time apart from cooking?

A. I love that is forces me to try new foods, gives me to opportunity to meet incredibly talented, generous people, and it means I have to constantly challenge myself to evolve creatively. Plus I have a good excuse to eat lots of delicious desserts now!

 

Q. What’s your favourite part of food blogging?

Q. Can you share with us any particular advice for someone new to cooking with coconut products?

A. Don’t just use coconut oil to cook with; there are so many weird and wonderful things it can be used for! It is the single greatest, most versatile, beauty product you can find, that can replace a lot of expensive products in your makeup bag!

 

Q. Where do you source your cooking inspiration?

A. I love to show people that eating a plant-based diet does not mean you have to miss out on eating your favourite treats, as most people ask me whether I miss eating junk food when they find out about my diet. I really enjoy taking foods that are thought of typically as ‘unhealthy’, and turning them into healthier, raw versions, to show people how delicious raw food can be. I also have an insatiable sweet tooth, so I really enjoy creating completely over-the top desserts

 

Q. When did your amazing creative designs start and where do you draw inspiration for them?

A. I originally started painting designs into my smoothie jars to compensate for the lack of props I had available to make my photos more interesting, but found it fun to challenge myself to create more intricate and elaborate designs; it’s strangely therapeutic! I draw inspiration for my designs from Buddhist culture, as this is a religion that promotes mindfulness, which are beliefs that I feel resonates with many people who adopt a vegan lifestyle.

 

Q. What’s your favourite all-time meal?

A. I am a self-confessed sweet potato addict, and I eat them for dinner at least five times a week. I love sweet potato fries with a little paprika and garlic, and heaps of guacamole on the side! I am also a sucker for some ‘nicecream’, which is simply frozen bananas blended into healthy, but completely convincing soft-serve ice cream!
